Hey all! Mainely Veggies headed west to California for the week and have returned with slight tans and tails of GREAT MEALS! I’ve got to say, Maine holds their own on the food front. We may have had many a great meal in Southern California (including two stops at famed In-and-Out Burger, for the Man-friend of course), but Maine knows great food too! We are ready to get back into the swing of things. After a week of eating out three meals a day I’m ready to get back into the kitchen, too bad we returned to EMPTY cupboards. It always seems like a great idea to try to not buy groceries before leaving for a trip. The trouble is, when you return all jet-lagged and lazy there’s nothing to eat!! Gotta get crafty!
Egg salad made from lone fresh ingredient! Two eggs, a little mayo and lots o’ mustard and s&p. Bread from a frozen loaf in the freezer, grilled in a pan brought it right back to life!
Weird old-ish carrots on the side…Not too bad actually! More pictures and details from California will be up soon!
