I keep frozen whole wheat naan (Indian flatbread) in the freezer for quick meals. I actually keep all of our bread products in the freezer because two people just can’t eat it fast enough before it goes bad. This lunch is one of my favorites. Olive oil and garlic on the bottom, arugula, feta, a little moz cheese (to hold it all together), s&p and lots of rosemary!
I actually make this in my toaster oven 🙂
A little side salad and voila!
