5 Beans and Frank

We spent the weekend in Vermont at a wedding on Lake Champlain. It was so beautiful! I will post more about that tomorrow.Tonight, veggie kielbasa was on the menu! I had never had it before but thought it looked pretty tasty.

I sautéed them in a pan with a little vegetable oil and half an onion sliced. On the side I made a 5 bean salad consisting of kidney, pinto, chick, green, and lima beans. Half an onion diced up and tossed together with about 1/4 cup of red wine vinegar and 2 tablespoons of olive oil that I had heated on the stove to melt in 2 tablespoons of raw sugar. Salt and peppered to taste. I made a ginormous bowl of it to last a couple days.

Off to get organized after a busy weekend! Maybe a cup of tea and a movie too 🙂
