This weeks farm share included kohlrabi, a vegetable I had never cooked with or even seen before. I was excited to give it a try though! It sort of looked like part octopus part beet but is actually a relative to cabbage and broccoli. Before deciding how to eat this weird monster I hit the world wide web to get some tips on preparation. A couple sites a came across instructed to peel, slice and add to a salad. So that’s what I did!
The closest comparison I could make for the flavor of the kohlrabi would probably be a more tender broccoli stock.
I thinly slice these to kohlrabi as well as about a cub of carrots, a cucumber and scallions and tossed them in a vinaigrette made of a 1/4 cup apple cider vinegar, 2 tablespoons of olive oil, a teaspoon of sugar and a diced shallot. Salt & peppered to taste. It was really simple, fresh, and tasty!
For the main event we had black bean burgers topped with a slice of cheddar, avocado, tomato and lettuce on a piece of wheat bread.
